Watermelon Mojito Cool Down

When the temperature starts to climb, Los Angeles can be sweltering.  Luckily, this sweet, fizzy drink will keep you cool while the Boys in Blue get hot, hot, hot!

STARTING LINEUP

  • 6 Mint leaves
  • .75oz lime juice (approximately the juice of one lime)
  • 1oz watermelon juice
  • .5oz simple syrup or 2tsp sugar
  • 2oz Don Q Cristal Rum
  • 4oz club soda

BATTING ORDER

You’ll build this cocktail in the glass!  Place 6 mint leaves at the bottom of a tall glass.  Add the sugar or simple syrup, lime juice, and watermelon juice on top of them.  (Alternatively, add 2 balls of fresh watermelon instead of pure watermelon juice if you don’t mind some watermelon pulp in the glass.)  Muddle this all together gently.  You don’t want to grind the mint too hard or it will get bitter, you simply want to mingle the oils into the juice.

After that, pour in your rum.  I like a Puerto Rican rum in my mojitos, so Don Q or Bacardi are good choices, but any non-funky rum will work great.  After that, add ice, top with club soda, garnish with more mint and another watermelon ball and stoically face those 90-degree Southern California days with 3 weeks left until summer even starts.
